Healthy Salmon Quiche

INGREDIENTS

  • 60g oats
  • 110g wholemeal flour
  • 100g plain flour
  • 100g butter
  • Pinch salt
  • 1 egg
FILLING
  • 2 courgettes
  • 1 large leek
  • 2-3 tbsp. oil
  • 100g sliced smoked salmon
  • 3 eggs
  • 100g low fat crème fraiche
  • 100g low fat feta cheese

METHOD

SERVES FOUR PEOPLE

  • Oven 200C
  • Grease a quiche tin well.
  • Put all the flour, oats, pinch salt in a bowl and mix well.
  • Add butter and rub in till like breadcrumbs
  • Add 5-6 tbsp. water and the egg and mix to a soft dough
  • Rest for few minutes if possible
  • Roll dough into a well-greased 25cm quiche dish.
  • Slice courgettes thinly, leeks and fennel.
  • Place leeks, courgettes in sauté pan with oil and cook for a few minutes.
  • Allow vegetables to cool for a few minutes
  • Chop salmon finely and add to vegetables
  • Place the mixture on the pastry case
  • Beat eggs with crème fraiche and season with dill or thyme.
  • Season with black pepper
  • Crumble feta cheese on top
  • Bake in oven for 20-25 minutes
  • Reduce temperature if required.
