Oat Blueberry
Muffins

INGREDIENTS

  • 100g porridge oatlets
  • 50g oat bran
  • 200g self-raising flour
  • 100g Dates
  • 2 tsp. baking powder
  • ½tsp bread soda
  • Tsp. cinnamon
  • Pinch salt
  • 75g light brown sugar
  • 1 egg
  • 100g melted butter
  • 150g blueberries
  • 3 tbsp. buttermilk
  • 1 tsp. vanilla extract
  • 250ml milk
  • 3 tbsp. buttermilk

METHOD

SERVES FOUR PEOPLE

  • Preheat oven to 200c
  • Melt butter in microwave
  • Soak oatlets with milk for 20 minutes
  • Place flour in a large bowl
  • Sieve salt, bread soda and baking powder into bowl
  • Add sugar and dates and cinnamon
  • In a small bowl beat egg with milk , butter and vanilla extract
  • Mix wet ingredients with dry ingredients and fold in the blue berries
  • Add 3 tablespoon buttermilk to make a soft mixture
  • Scoop into well greased muffin tin
  • Bake in hot oven 200c for 10 minutes, then reduce heat to 180c for 20-25 minutes
  • Remove from the tin and allow to cool
