Sausage Rolls

INGREDIENTS

  • 200g Bread crumbs
  • 225g White mature cheddar
  • 50g parmesan
  • 100g ricotta
  • 1 egg
  • 1 large onion
  • 2 tbsp. cream
  • 3 tbsp. chives parsley Thyme
  • 1 tsp. mustard powder
  • Pinch smoked paprika
  • 2-3 Roasted peppers sliced
  • S/P
  • 2 tbsp. Relish
  • 15g Butter
  • 100g chestnut mushrooms
OPTION 2
  • 200g pork mince
  • 100g black pudding
  • 1 onion
  • 1 small apple grated
  • Fresh sage/thyme
  • 1 egg
  • Salt and pepper

METHOD

SERVES FOUR PEOPLE

  • Oven 200°C
  • Sweat onion in butter, add sliced mushrooms. Cool
  • Grate cheddar
  • Mix all ingredients
  • Buzz lightly in food processor
  • Season well.
  • Make as for normal sausage rolls
  • Bake for 15-20 minutes
  • Serve with Christmas relish
OPTIONAL FILLING
  • 500g sausage meat with black pudding and Apple
  • 1 tsp. thyme
  • 2tbsp chopped sundried tomatoes
  • ½ egg
  • Pulse all ingredients in food processor and use like above
