Beef Burgers with Cream Cheese and Garlic Stuffing

INGREDIENTS
1 kg (2 lbs.) lamb or beef mince,
1 small onion, very finely chopped
1 tbsp. fresh parsley, chopped
1 tbsp. fresh thyme
Salt and freshly ground black pepper
1 egg
50g grated cheddar
25g breadcrumbs
STUFFING
75g (3 oz.) cream cheese or a low fat cottage cheese
1 small clove garlic, chopped
1 teaspoon chives or parsley, chopped
METHOD
SERVES FOUR PEOPLE
Put the minced beef in a bowl, add the onion, herbs and seasoning and mix well together. Add breadcrumbs, cheese and beaten egg. Dampen your hands and shape the mixture into four beef burgers.
Mix the cream cheese, garlic and herbs together. To stuff the burgers, press a cavity in the middle of each one with your thumb, add a spoonful of the filling and, with dampened hands, close the meat around it. Allow enough time to chill well before cooking.
Grill or fry or bake in oven for 20 minutes.
Check with skewer.
SPICY BARBECUE SAUCE
1 tbsp. oil
1 onion
1 clove garlic
125ml water
2-tablespoon vinegar
2 tbsp. brown sugar
2-teaspoon mustard
1 slice lemon
1 sprig thyme
Pinch canenne
2 tablespoon Worcester sauce
4-5 tablespoon tomato ketchup
2-tablespoon tomato puree
Salt and pepper
Heat the oil and fry onion and garlic until soft
Add all the ingredients, bring to the boil and cook for 15 minutes
Taste and adjust seasoning as you may need more sugar or vinegar.
